DESCRIPTION :
The white short okra are short, stumpy pods are best when harvested about 2 to 3 inches long. The very tiny young pods were often dried for winter soups and the roasted seeds could serve as coffee. Plants reach a height of 4 feet and will begin yielding from mid-summer until frost.
Okra does best on a fertile, loamy soil with lots of added humus. Excess nitrogen will favor leaf production at the expense of pod production. Start seed in pots 2-3 weeks before transplanting outside, or plant directly in the garden once the soil temperature averages 65 degrees F (3-4 weeks after last frost). Sow seed 3/4-1 in. deep and thin to 18 in. apart in rows 5-6 ft. apart. Seed may be slow to germinate. To speed germination, soak seed overnight in water, Hill Country Heirloom Red Okraor abrade the seed lightly with sandpaper to break down the hard seed coat.
Sow okra seeds ½ inch deep. When direct-sowing okra, space seeds 2 inches apart and thin to a final spacing of 12-18 inches apart and it take 6 -12 day for germination. Okra develops best in warm climates with warm nights, preferring temperatures between 68° and 95°F.
Okra pods are harvested for eating when they are young and immature, just after the flowers fade. Okra pods can be harvested every few days with pruning shears or a sharp knife. If pods are longer than 5 inches, they might be tough, though there are some varieties that grow longer than others and these may still be tender.
